It is a beautiful day here this morning. The sun in shining, the boys slept in until 8 am and due to a lack of ingredients in our cupboards I decided to shake up the routine a bit and whip up some pumpkin bread.
Before I had a micropreemie I never realized how much life changes when you bring your tiny bundle home. I mean I was expecting the trips to the hospital back and forth and how much time that takes out of your schedule but once you get home you are on quarantine. Right now Miss P and I are pretty much one and the same and her restrictions at least when it comes to how much she can be out and about are mine. It is very isolating and I am starting to feel the effects more and more as this winter drags on. So I am trying to do things that spice up our day to day so that we don’t go crazy with boredom.
I am always looking for the perfect pumpkin bread. You want a moist dense texture with a spicy interior. So that means I tinker, a lot. Here is my latest contribution.
3 1/2 cups of All Purpose Flour
2 tsp baking soda
1 tsp salt
2 tsp pumpkin pie spice
1 tsp cinnamon
1/2 tsp ground ginger
1/2 tsp cloves
1 cup of vegetable oil
1 1/2 cup granulated sugar
1/2 cup packed brown sugar
1 can pumpkin puree 15 oz
2/3 cup water
Preheat the oven to 350 F. Prepare your muffin tins or loaf pans by using some cooking spray with flour in it or lightly greasing and flouring your pans.
Mix the dry ingredients and the spices together in a bowl. Take a separate bowl and combine the oil and BOTH sugars. Add the eggs one at a time stirring thoroughly after each addition. When the mixture is homogeneous add in the pumpkin puree. Once the entire mixture is combined add in the water and stir to combine.
Add the dry ingredients to the wet and stir until just combined. Fill your pans/tins 2/3 of the way and bake for 18 minutes for muffins and 30 for loaves. Then check for doneness. When a toothpick is inserted into the center and comes out clean they are finished.
Slather them with butter, pour a cup of coffee and enjoy! They really don’t need the butter, but for a treat you can put some butter on them. When I asked the kids how they tasted they said, “more!!!”
